Try this Chickpea Salad at your next summer BBQ.
2 cups of cooked garbanzo beans drained & rinsed
Juice of 1 lemon
1 cup parsley minced
1 cup mint minced
1 or 2 avocados cubed
1/2 cup black/green olives chopped
You can add red onion, cherry tomatoes and if you please some artichoke hearts. To finish drizzle with olive or flax seed oil and garnish with your favorite coarse sea salt. For extra flavor sprinkle seasonal goodness like the pomegranate used in this delish dish.
